Tim Johnston: General Manager of Vapiano
Tim’s job is to make sure our operations are like a well (olive) oiled machine. You’ll often see him buzzing around the restaurant, making sure our customers and staff are happy. And when we’re particularly busy, you might even spot him behind the counter whipping up a pasta or adding toppings to pizzas.
What’s your favourite…
Smell? The smell of the Lindt chocolate dolci “Death by Chocolate” as it comes out of the oven.
Sound? Surf crashing onto the beach.
Place? Positano – a small traditional village on the Amalfi Coast (Costiera Amalfitana), in Campania, Italy.
Time of day? Sunrise. The roads are quieter and there is the rest of the day to look forward to.
Cooking utensil? Vegetable peeler. They make life so much easier.
Ingredient? Vanilla beans.
Aussie vs Italy…
Film? Aussie – The Castle.
Fashion? Aussie – Nothing beats board shorts and thongs at the beach.
Car? Italy- Maserati.
Food? Italy- Home made gnocchi and tiramisu.

Will Cooke: The Don
Will Cooke may be head of Vapiano but he can also make a mean pizza base. After many years working in McDonald’s management Will discovered his inner Italian and decided to bring Vapiano to Australia, spending many months scouring the country for just the right produce, people and locations to make Vapiano a true Italian-Australian success story.
FAVOURITE VAPIANO PASTA?Gamberi e Spinaci. I love the prawns, pesto and baby spinach in the cream sauce.
FAVOURITE VAPIANO PIZZA?Diavolo – you just can’t beat pepperoni, capsicum, onion, mozzarella and our secret tomato base.
FAVOURITE INGREDIENT?Garlic!
ARE YOU ITALIAN-AUSTRALIAN?I may have Irish heritage but I love football and surfing, Italian food and pavlova, Vespas and utes, so I like to think I could be an honorary one! Plus I brought Vapiano to Australia so I hope that gives me extra Italian-Australian points.
